Ideas for allocating network devices

So I've got my Verizon Fios Cable Modem/Router, and then I have my new Almond+ tied (LAN Cable) into it.  So now, theoretically, I have 3 Wireless Networks:

1)  Almond 2.4Ghz  (using hardline to Fios Router)
2)  Almond 5GHz (using hardling to Fios Router)
3)  Fios Wifi (mi424wr router at 2.4 GHz, I think)

I would like to set up my home so that different devices use differnt networks, for maximum efficiency over the "air."

So, couple of questions:

1)  Should I disable one of the two 2.4 GHz wifi networks, or is changing the channels sufficient?  If so, which one?
2)  In my house, I have the following things connected to the internet.  I will sort of priorotize the things up top of the list that need to work as well as possible

    A)  Wife's desktop Mac upstairs from routers
    B  Two x iPad, 2 x cell phone
    C  Network Printer
    D)  My laptop (never hardlinked to router, in office with routers, used part time)
    E)  Desktop in office (hardlinked to router, also on wifi - do I gain a lot of speed by having two connections)
    F)  Cable Box DVR
    G)  SlingBox
    H)  Apple TV
    I)  Onkyo Receiver
    J)  Baby Cam (Stem iZon) - kid is getting older, don't use as much
    K)  Home Weather Station - uses limited bandwith (Netatmo system)
    L)  Withings Scale

I do plan to add some sensors as well, at a later date.

Would like so assistance in how to best set up our home...

For my current (non-almond+ network) I have 2 wrt54g's running it. One is on the north side of my house, and acts as the router and AP. The one I have on the south side of my house is in AP mode.
The SSID and password are the same on both AP's, but the channels are set differently.
My devices roam between the networks well.

Curious how well your home wireless coverage is with your combo Verizon FIOS box? 

Looking at the Verizon FIOS Actiontec MI424WR it appears to be an 802.11g and 802.11b (2.4Ghz) access point.

I utilize a similiar box for my Verizon FIOS today.  I disabled my wireless on the Verizon box and bridged a DD-WRT'd box to it a few years back.

Can you do a rough drawing or provide an idea of where what is where?

Curious about the devices that utilize multimedia and whether they are wireless or wired.
Guessing on your list....

    E)  Desktop in office (hardlinked to router, also on wifi - do I gain a lot of speed by having two connections)  typically you can only have one network connection to a desktop.  I do not see how your are using both wireless and wired?

Our Verizon router has actually been pretty good for us so far.  The only thing that is wired is the desktop.

I have attached images that show the rough layout of our house floorplan, with letters denoting locations of the items.

My desktop has a motherboard wired network connection and a USB wireless connection, so it does have two.  Just not sure if that is good or bad...
