Raspberry Pi Zero Router on a stick

I am thinking about setting up a Raspberry Pi Zero as a router on a stick that will add OpenVPN and DNS filtering to block ads using Pi-hole. I have a few questions before I start the project I am hoping can be answered first.

1. If I set the Pi to act as an NIC when plugged into the router would the Almond+ be able to us that instead of an Ethernet port?
2. Can the routers default gateway be set to the Pi without causing a loop? I would like some router features to go through the VPN as well.
